Warm Spinach Salad with Bacon, Feta and Pine Nuts
|
Ingredients:
- 1/4 cup diced bacon
- 1/4 cup thinly sliced red onion
- 2/3 cup reduced-sodium chicken broth
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 6 cups baby spinach leaves or regular spinach leaves
- 1/4 cup crumbled feta cheese
- 1/4 cup lightly toasted pine nuts (cook in a dry skillet for 2-4 minutes until golden brown)

Preparation:
- Place in large skillet over medium-high heat. Add bacon and cook 3-5 minutes, until browned. If necessary, drain most of fat from pan leaving about two tsps.
- Add onion to pan and cook 3-5 minutes until onion is soft.
- Add broth, salt, and pepper and bring to a simmer. Simmer 1 minute to heat through.
- Place spinach leaves in large bowl. Pour warm bacon sauce over top.
- Top with feta cheese and pine nuts just before serving.
