Endlessly versatile home cooked meals, ready in minutes
Pine nuts have been eaten in Europe and Asia since the Paleolithic period. They are frequently added to meat, fish, and vegetable dishes. In Italian they are called pinoli or (rarely) pignoli[4] and are an essential component of Italian pesto sauce.

Serves 4

Warm Spinach Salad with Bacon, Feta and Pine Nuts
Ingredients:
  • 1/4 cup diced bacon
  • 1/4 cup thinly sliced red onion
  • 2/3 cup reduced-sodium chicken broth
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 6 cups baby spinach leaves or regular spinach leaves
  • 1/4 cup crumbled feta cheese
  • 1/4 cup lightly toasted pine nuts (cook in a dry skillet for 2-4 minutes until golden brown)
Preparation:
  1. Place in large skillet over medium-high heat. Add bacon and cook 3-5 minutes, until browned. If necessary, drain most of fat from pan leaving about two tsps.
  2. Add onion to pan and cook 3-5 minutes until onion is soft.
  3. Add broth, salt, and pepper and bring to a simmer. Simmer 1 minute to heat through.
  4. Place spinach leaves in large bowl. Pour warm bacon sauce over top.
  5. Top with feta cheese and pine nuts just before serving.
