Tilapia with Mushroom-Walnut Crust

Ingredients:
- cooking spray
- 2 tsp olive oil
- 1/4 cup minced shallots
- 2 cloves garlic, minced
- 2 cups chopped cremini mushrooms (or any combination of wild mushrooms)
- 1 tsp dried thyme
- 1/2 cup chopped walnuts
- 2 tbsp chopped fresh parsley
- 4 tilapia fillets (about 5 oz ea)
- salt and freshly ground black pepper

Preparation:
- Preheat oven to 400 degrees.
- Coat a baking sheet with cooking spray.
- Heat oil in a large skillet over medium-high heat. Add shallots and garlic and cook 1 minute. Add mushrooms and cook 3-5 minutes until mushrooms soften and release juice. Add thyme and cook 1 minute until thyme is fragrant. Remove from heat and stir in walnuts and parsley.
- Arrange tilapia on prepared baking sheet. Season fish with salt and pepper. Spoon mushroom mixture over fish fillets and press down, making a thick crust.
- Roast 10-15 minutes until fish is fork-tender.
