Endlessly versatile home cooked meals, ready in minutes
Tilapia are firm, mild, high in protein, and low in total and saturated fats.

Serves 4

Tilapia with Mushroom-Walnut Crust
Ingredients:
  • cooking spray
  • 2 tsp olive oil
  • 1/4 cup minced shallots
  • 2 cloves garlic, minced
  • 2 cups chopped cremini mushrooms (or any combination of wild mushrooms)
  • 1 tsp dried thyme
  • 1/2 cup chopped walnuts
  • 2 tbsp chopped fresh parsley
  • 4 tilapia fillets (about 5 oz ea)
  • salt and freshly ground black pepper
Preparation:
  1. Preheat oven to 400 degrees.
  2. Coat a baking sheet with cooking spray.
  3. Heat oil in a large skillet over medium-high heat.  Add shallots and garlic and cook 1 minute.  Add mushrooms and cook 3-5 minutes until mushrooms soften and release juice. Add thyme and cook 1 minute until thyme is fragrant.  Remove from heat and stir in walnuts and parsley.
  4. Arrange tilapia on prepared baking sheet.  Season fish with salt and pepper. Spoon mushroom mixture over fish fillets and press down, making a thick crust.
  5. Roast 10-15 minutes until fish is fork-tender.
