Endlessly versatile home cooked meals, ready in minutes
Though mushrooms are commonly thought to have little nutritional value, many species are high in fiber and provide vitamins such as thiamine, riboflavin, niacin, biotin, cobalamins, ascorbic acid. Though not normally a significant source of vitamin D, some mushrooms can become significant sources after exposure to ultraviolet light, though this also darkens their skin.

Serves 4

Sweet and Sour Multi-Colored Chicken Kebabs
Ingredients:
  • cooking spray
  • 1-1/4 lbs boneless, skinless chicken breasts, cut into 2-in cubes
  • 1 pint cherry or grape tomatoes
  • 1 green bell pepper, seeded and cut into 2-in pieces
  • 1 cup small button or cremini mushrooms, stem ends trimmed
  • 4-6 scallions, cut into 2-in pieces
  • wooden or metal skewers
  • 1/4 cup apricot preserves
  • 1/4 cup reduced-sodium soy sauce
  • 1 tbsp black bean or hoisin sauce
  • 1/4 tsp hot sauce
Preparation:
  1. Coat a stove-top grill pan or griddle with cooking spray and preheat to medium-high.
  2. Alternate pieces of chicken, tomatoes, bell pepper, mushrooms, and scallions onto skewers. Set aside.
  3. In a medium bowl, whisk together preserves, soy sauce, black bean (or hoisin) sauce, and hot sauce.
  4. Brush mixture all over chicken and vegetables.
  5. Grill kebabs 6-8 minutes until chicken is cooked through, turning frequently.
