Sweet and Sour Multi-Colored Chicken Kebabs

Ingredients:
- cooking spray
- 1-1/4 lbs boneless, skinless chicken breasts, cut into 2-in cubes
- 1 pint cherry or grape tomatoes
- 1 green bell pepper, seeded and cut into 2-in pieces
- 1 cup small button or cremini mushrooms, stem ends trimmed
- 4-6 scallions, cut into 2-in pieces
- wooden or metal skewers
- 1/4 cup apricot preserves
- 1/4 cup reduced-sodium soy sauce
- 1 tbsp black bean or hoisin sauce
- 1/4 tsp hot sauce

Preparation:
- Coat a stove-top grill pan or griddle with cooking spray and preheat to medium-high.
- Alternate pieces of chicken, tomatoes, bell pepper, mushrooms, and scallions onto skewers. Set aside.
- In a medium bowl, whisk together preserves, soy sauce, black bean (or hoisin) sauce, and hot sauce.
- Brush mixture all over chicken and vegetables.
- Grill kebabs 6-8 minutes until chicken is cooked through, turning frequently.
