Mixed Greens with Mandarin Oranges and Red Cabbage

Ingredients:
- 15-oz can Mandarin oranges in light syrup
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- salt and ground black pepper, to taste
- 3 cups mixed baby greens
- 1 cup shredded red cabbage

Preparation:
- Drain oranges, reserving oranges in a small bowl and juice in a medium bowl.
- To the orange juice, add olive oil, vinegar, and mustard and whisk until blended.
- Season to taste with salt and pepper.
- In a large bowl, combine lettuce, cabbage, and oranges. Toss to combine.
- Pour dressing over salad mixture and toss to combine.
- Season to taste with salt and pepper.
