Endlessly versatile home cooked meals, ready in minutes

Serves 4

Mixed Greens with Mandarin Oranges and Red Cabbage
Ingredients:
  • 15-oz can Mandarin oranges in light syrup
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • salt and ground black pepper, to taste
  • 3 cups mixed baby greens
  • 1 cup shredded red cabbage
Preparation:
  1. Drain oranges, reserving oranges in a small bowl and juice in a medium bowl.
  2. To the orange juice, add olive oil, vinegar, and mustard and whisk until blended.
  3. Season to taste with salt and pepper.
  4. In a large bowl, combine lettuce, cabbage, and oranges.  Toss to combine.
  5. Pour dressing over salad mixture and toss to combine.
  6. Season to taste with salt and pepper.
