Maple-Orange Chicken With Sweet Potatoes

Ingredients:
- cooking spray
- 4 skinless chicken breast halves with bone (5 oz ea)
- salt and ground black pepper
- 2 sweet potatoes, peeled and cut into 2-in pieces
- 1 cup orange marmalade
- 1/2 cup orange juice
- 2 tbsp reduced-sodium soy sauce
- 2 tbsp maple syrup
- 2 tsp toasted sesame oil

Preparation:
- Preheat oven to 400 degrees F. Coat a large roasting pan with cooking spray.
- Season chicken all over with salt and pepper and place in prepared pan. Arrange sweet potatoes around chicken, spray potatoes with cooking spray, and season with salt and pepper. Set aside.
- In a medium bowl, whisk together orange marmalade, orange juice, soy sauce, maple syrup, and sesame oil. Pour mixture over chicken and potatoes.
- Roast 35 minutes until chicken is cooked through and potatoes are tender.
