Curried Shrimp With Cilantro, Lime and Garlic

Ingredients:
- 2 tsp olive oil
- 1/2 cup diced white onion
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1 cup reduced-sodium vegetable or chicken broth
- 1-1/2 lbs raw large shrimp, peeled and deveined
- 1 tbsp fresh lime juice
- 1/2 plain yogurt or sour cream
- 1/4 cup chopped fresh cilantro
- salt and ground black pepper
- 1 cup jasmine, basmati, or white rice cooked according to package directions

Preparation:
- Heat oil in a large skillet over medium heat. Add onion and garlic and saute 2 minutes. Add curry powder and stir to coat. Cook 1 minute, until curry is fragrant.
- Add broth. Bring to a simmer.
- Add shrimp and lime juice and simmer 3 minutes, until shrimp are bright pink and cooked through.
- Remove from heat and stir in yogurt and cilantro.
- Season to taste with salt and pepper.
- Serve shrimp mixture over rice.
