Endlessly versatile home cooked meals, ready in minutes
Most recipes and producers of curry powder usually include coriander, turmeric, cumin, and fenugreek in their blends. Depending on the recipe, additional ingredients such as ginger, garlic, fennel seed, cinnamon, clove, mustard seed, green cardamom, black cardamom, mace, nutmeg, red pepper, long pepper, and black pepper may also be added.

Serves 4

Curried Shrimp With Cilantro, Lime and Garlic
Ingredients:
  • 2 tsp olive oil
  • 1/2 cup diced white onion
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 1 cup reduced-sodium vegetable or chicken broth
  • 1-1/2 lbs raw large shrimp, peeled and deveined
  • 1 tbsp fresh lime juice
  • 1/2 plain yogurt or sour cream
  • 1/4 cup chopped fresh cilantro
  • salt and ground black pepper
  • 1 cup jasmine, basmati, or white rice cooked according to package directions
Preparation:
  1. Heat oil in a large skillet over medium heat. Add onion and garlic and saute 2 minutes. Add curry powder and stir to coat. Cook 1 minute, until curry is fragrant.
  2. Add broth. Bring to a simmer.
  3. Add shrimp and lime juice and simmer 3 minutes, until shrimp are bright pink and cooked through.
  4. Remove from heat and stir in yogurt and cilantro.
  5. Season to taste with salt and pepper.
  6. Serve shrimp mixture over rice.
