Serves 4

Chicken Fried Pork with Sweet Jalapeno Sauce
Ingredients:
  • 4 bonelss pork loin chops (5 oz ea)
  • salt and ground black pepper
  • 2 tbsp all-purpose flour
  • 1 tsp salt-free garlic and herb seasoning
  • 1 tbsp olive oil
  • 1/2 cup reduced-sodium chicken broth
  • 1/2 cup chopped pickled jalapenos
  • 1/4 cup honey
Preparation:
  1. Place pork chops between two pieces of plastic wrap and pound with a meat mallet or rolling pin until about 1/2-inch thick. Season both sides with salt and black pepper.
  2. In a shallow dish, combine flour and garlic-herb seasoning. Mix well. Add pork to flour mixture and turn to coat both sides.
  3. Heat oil in large skillet over medium-high heat. Add pork and cook 2 minutes per side, until golden brown.
  4. Meanwhile, in a small bowl, combine broth, jalapenos, and honey. Mix until blended.
  5. Add mixture to pork and bring to a simmer. Simmer 3-5 minutes, until pork is cooked through (still slightly pink in the center) and sauce thickens.
