Caprese Salad with Orzo
|
Ingredients:
- 1 lb orzo pasta
- 1/4 cup extra virgin olive oil
- 1 tbsp white wine vinegar
- 2 large ripe tomatoes or 3 medium Roma (plum) tomatoes, diced
- 1/2 lb fresh mozzarella cheese or smoked mozzarella cheese, diced
- 1/2 cup chopped fresh basil
- salt and ground black pepper

Preparation:
- Cook pasta according to package directions.
- Drain and transfer pasta to a large bowl.
- Fold in oil and vinegar and toss to coat.
- Fold in tomatoes, mozzarella and basil.
- Season to taste with salt and pepper.
- Serve warm, at room temperature, or chilled.
