Endlessly versatile home cooked meals, ready in minutes
The type used in Italian food is typically called sweet basil, as opposed to Thai basil (O. basilicum var. thyrsiflora), lemon basil (O. × citriodorum) and holy basil (Ocimum tenuiflorum), which are used in Asia.

Serves 4

Caprese Salad with Orzo
Ingredients:
  • 1 lb orzo pasta
  • 1/4 cup extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 2 large ripe tomatoes or 3 medium Roma (plum) tomatoes, diced
  • 1/2 lb fresh mozzarella cheese or smoked mozzarella cheese, diced
  • 1/2 cup chopped fresh basil
  • salt and ground black pepper
Preparation:
  1. Cook pasta according to package directions.
  2. Drain and transfer pasta to a large bowl.
  3. Fold in oil and vinegar and toss to coat.
  4. Fold in tomatoes, mozzarella and basil.
  5. Season to taste with salt and pepper.
  6. Serve warm, at room temperature, or chilled.
