Banana Cream Pie Parfaits with Almond Biscotti and Toasted Almonds
|
Ingredients:
- 2 cups vanilla yogurt
- 2 large ripe bananas, peeled and sliced
- 1 tsp vanilla extract
- 8 almond biscotti cookies, crushed
- 4 tbsp slivered almonds, lightly toasted in dry skillet for 3-4 minutes
- 2 cups whipped cream or non-dairy whipped topping
- unsweetened cocoa powder

Preparation:
- In a blender or food processor, combine yogurt, bananas, and vanilla. Process until smooth.
- Arrange half the crushed cookies at the bottom of four tall glasses.
- Top with half of banana mixture.
- Top with remaining crushed cookies and remaining banana mixture.
- Top with whipped topping.
- Sift cocoa over top.
- Sprinkle with toasted almonds.
